Au Gratin Potatoes were a staple growing up in my house and are therefore a very big comfort food for me. They are also a hard and fast way to derail my keto diet so they are on the no go list for me.
When I came across the idea to replace the potatoes with zucchini, you can imagine my skepticism, but I have to say that I was pleasantly shocked at how much this tasted like the real thing.
A much healthier and low carb version, this is also a great way to help your kids get their veggies in. They won’t know unless you tell them!

Zucchini O’Gratin

Melt the butter over medium heat in a skillet.

Add garlic and onion powder and cook until browned

Add in the almond milk and simmer until it begins to boil

Slowly add in 1 cup of the cheddar cheese and stir until completely melted

Add in the zucchini slices and cover completely with sauce
Cook for five minutes, stirring

Transfer mix to a baking dish and top with remaining cheddar

Bake at 400 degrees for 20 minutes or until the top is browned
