This is a very yummy casserole that has been a go to for me since I started the low carb lifestyle in the early 2000’s. Very much a comfort food and super easy to make. I hope you enjoy it!

Ingredients
- 6 cups steamed broccoli
- 1 cup heavy cream
- 1 cup cheddar cheese (shredded)
- 1/2 cup sour cream
- 2 eggs (beaten)
- 3 oz pork rinds (crushed)
- 3 cup cooked chicken (shredded or cubed)
Instructions
- Preheat oven to 350 degrees
- Layer a 11 x 13 casserole dish with cooked broccoli.
- In a separate bowl mix cream, sour cream, cheese, and eggs until smooth.
- Add chicken and mix well.
- Pour mix over the broccoli in the casserole dish and sprinkle with crushed pork rinds.
- Bake for 35-30 minutes.
