Low Carb Taco Casserole

This recipe is pretty tasty and easy.

I found a way to make it easier and faster on a weeknight is to pre-brown the ground meat with the taco seasoning on the weekends when I have more free time.  Since everything has to warm up in the oven anyway, it’s a bit of a time saver for me to be able to pop the already cooked meat out of the fridge and just start the assembly.

  1. Preheat the oven to 400 degrees

  2. Brown the ground meat and taco seasoning in a fry pan, breaking up the chucks of meat until cooked through.

  3. In a large bowl mix cottage cheese, salsa, and 1 cup of the cheddar cheese. Set aside.

  4. Add the ground meat to the bottom of an 11 x 13 casserole dish and spread evenly. Spread cheese and salsa mix on top of the meat and sprinkle the remaining cheese on top.

  5. Place the casserole dish in the oven and bake for 15 - 20 minutes until cooked through and the cheese is hot and bubbly.
